Easy Chicken Salad – Paleo & Whole30
This Paleo and Whole30 approved version of a classic is perfect for lunch in lettuce wraps or on a salad! Throw it between two pieces of whole-grain bread for non-Whole30ers.

  1. Chop your red onion, apple, and celery in uniform size, about a quarter inch.
  2. In a large bowl, combine all ingredients and stir to combine.
  3. Serve on a sandwich, in a lettuce or collard wrap, or on a salad!
Recipe Notes
  • If you’re not on Whole30 or eating Paleo, you can replace the mayo with plain Greek yogurt and use regular cranberries.
  • 1/4 cup mayo yields more of a chunky chicken salad vs. smooth. If you prefer the latter, simply add more mayo.
  • Feel free to swap cranberries for raisins, add sliced grapes, or any other preferences you might have!
