Easy Paleo Banana Carrot Bread
This Easy Paleo Banana Carrot Bread is a healthy spin on the traditional banana bread that my grandma used to make. Make the batter in the blender, pour it into your loaf tin and you’ve got breakfast for the week!

  1. Preheat oven to 350 degrees. Spray a loaf tin with nonstick spray.
  2. Place all ingredients in blender. Blend until smooth.
  3. Pour into loaf tin, top with walnuts and bake for 50-55 minutes, until a toothpick inserted into the center comes out clean.
Recipe Notes
  • If your blender is strong enough, you can throw baby carrots, or roughly chopped full sized carrots straight in. I used two full size carrots.
  • If you don’t have walnuts, you can top with pecans for an equally as wonderful flavor.
