  1. Preheat oven to 350. Spray a muffin tin with coconut oil spray or another non-stick.
  2. In a medium sized bowl, mash bananas and mix in wet ingredients.
  3. Add all dry ingredients except dark chocolate chips to wet ingredients. Mix well.
  4. Fold in chocolate chips (save some for toppings if desired!) and pour into muffin tin, filling each well about 3/4 of the way.
  5. Bake for 18-20 minutes, or until a toothpick comes out clean.
  6. Keep in fridge for about 7 days or freeze for longer!
