I seem to have this tactic that I try every year where I start to wear sweaters because the calendar says it’s fall, hoping and praying that surely it will cool down, right?

Every year, this tactic fails and I end up over-dressing for most of October.

As I’m typing this it’s 90 degrees out. On October 8th.

I MEAN, COME ON.

Similarly, maybe if I cook enough fall-themed dishes, it will get cooler outside.

Well, it’s worth a shot.

Pumpkin Chia Overnight Oats: What You’ll Need

Y’all know overnight oats (okay, really any meal-prepped breakfast that makes life easier) are my jam. These summery lemon blueberry overnight oats are one of the most popular on the blog, so I thought I’d bring this fall-themed one into the mix. Here’s what you’ll need:

  • Old fashioned oats
  • Chia seeds
  • Canned pumpkin puree
  • Pumpkin pie spice
  • Vanilla extract
  • Non-dairy milk
  • Maple syrup
  • Pumpkin Spice Nutpods Creamer (optional- for extra creamy-ness)

I’m a big fan of the regular French Vanilla Nutpods creamer (it’s dairy-free and Whole30 approved) but didn’t love this year’s pumpkin spice flavor so much. Instead, I’m adding a splash of it to baked goods like overnight oats and pumpkin bread for some extra goodness. If you’re skipping it, just add the equivalent amount of.

  • 1 cup old fashioned oats
  • 1/4 cup canned pumpkin puree
  • 1 tbsp chia seeds
  • 1/2 tsp pumpkin pie spice
  • 1 tbsp maple syrup
  • 3/4 cup almond milk
  • 1/4 cup pumpkin spice dairy free creamer* or 1/4c milk

Instructions
  1. Combine all ingredients in a large bowl and mix to combine well. Separate into two containers and let sit overnight.
  2. In the morning, add desired toppings, and more liquid to thin if necessary.
Recipe Notes
  • The Pumpkin Spice Nutpods Creamer adds some extra indulgence to the oats, but if you'd like to skip it, just replace it with milk.
