  1. Set a large pot with water to boil on the stove. Meanwhile, chop up cauliflower into small florets. Once you have a rolling boil, add in cauliflower. Boil for 10 minutes, or until a fork pierces the cauliflower easily.
  2. Meanwhile, saute garlic and ghee over medium-low heat until fragrant, taking care not to burn the garlic. Set aside.
  3. In a blender, combine drained cauliflower, garlic and ghee, rosemary, salt, and pepper. Blend until smooth.
  4. Gently fold in chopped parsley and serve.
