I’m a firm believer that anything in a mason jar is just cuter. Anyone else?

I’m a little embarrassed to admit how many I have in my house of all shapes and sizes. I keep empty salsa jars, glass nut butter jars, ALL THE JARS. They all live on a special shelf in my kitchen that I’m not sure my husband knows about.

If you follow me on Instagram, you’ve probably noticed that I’m all about the taco salad life. More often than not, I’m also adding crushed blue corn tortilla chips on top because why not. I love the salad-in-a-jar idea because it packs everything you need into one grab-and-go container.

I know what you’re thinking- isn’t everything going to get soggy?

Nope, it’s not. But you have to be strategic about how you layer your salad. Let’s get to it.

This Southwest Chicken Salad is so easy to make for meal prep! Love that you can layer it all and take it to go!

What You’ll Need

  • 32-oz mason jar (I bought a whole case of them and use them for storing things like brown sugar, oats, etc., in my pantry)
  • Romaine lettuce or your favorite greens
  • Cooked chicken (use this method for 10-minute pressure cooker taco chicken!)
  • Fresh cilantro
  • Jalapeno (optional)
  • Corn
  • Black beans
  • Tomato
  • Salsa (you could also use this creamy chipotle dressing– so good!)

You could also add quinoa or brown rice for more of a burrito bowl style salad.

How To Make A Mason Jar Salad

In general, you want to layer your most moist items of your mason jar salad at the bottom (dressing, water-heavy vegetables like tomatoes and cucumbers) and your driest items at the top (lettuce). Here’s how to layer this salad:

Simply layer your ingredients and you’re set! Line up your mason jars to efficiently make several at once. At the office (or wherever you’re having lunch!), dump your jar into a bowl and you’re good to go!

Southwest Chicken Salad
This Southwest Chicken Salad is full of flavor and perfect to make for meal prep! Just throw it in a bowl and eat!

Ingredients
  • 1/4 cup salsa
  • 1/2 cup black beans
  • 2 tbsp corn
  • 1/2 jalapeno sliced
  • small handful cilantro chopped
  • 1 cup cooked chicken
  • 2 cups lettuce

  • 1/4 cup salsa
  • 1/2 cup black beans
  • 2 tbsp corn
  • 1/2 jalapeno sliced
  • small handful cilantro chopped
  • 1 cup cooked chicken
  • 2 cups lettuce
Instructions
  1. In a mason jar, layer ingredients in the following order: salsa, black beans, corn, jalapeno, cilantro, chicken, and lettuce! Stays good in the fridge for 2-3 days.
Recipe Notes
  • Swap salsa for a creamy chipotle dressing if desired!
  • Feel free to eyeball and add more or less of an ingredient. Quinoa or brown rice would be good for an extra oomph.
