  1. Heat a large skillet over medium heat. Add olive oil.
  2. Once oil is hot, add chopped asparagus, spiralized zucchini and sliced mushrooms. Cover and allow to cook for 2 minutes so that asparagus can steam and zucchini can soften.
  3. Uncover skillet and add sundried tomatoes, cherry tomatoes, garlic peas, salt and italian seasoning. Stir until well combined.
  4. Add spinach and marinara sauce and turn heat down to medium-low. Cook for 2-3 minutes to allow flavors to come together. Serve hot!
Recipe Notes
  • Garnish with chiffoned basil if desired. It’s so good!
  • Feel free to swap in or out any veggies you’d like.
  • Use your favorite marinara sauce and add more if desired.
  • Grilled shrimp or chicken pairs excellent with this dish if you want to add some protein!
