This Bacon, Egg and Biscuit Breakfast Bake is so simple to make! It comes together in five minutes and reheats well for a quick weekday breakfast.

This easy Bacon, Egg and Biscuit Breakfast Bake is so quick to throw together! It was a major hit with my husband!

Breakfast casseroles and bakes are one of my husband’s favorite breakfasts. He’ll happily slice up one and have it for breakfast all week. I’m more likely to switch things up and have something like eggs and roasted tray veggies or overnight oats, but I like prepping him dishes like this.

I’ve talked about eating healthy while your significant other doesn’t before, but I really try to balance healthy eating with some of his less-than-healthy favorites, like these poblano sour cream chicken enchiladas and this all time favorite queso. Life’s just too short to say no to enchiladas and queso, you know?

I’m going to be real with y’all: I don’t meal prep for him every week. As much as I would love to, there are definitely weeks where he’s eating cereal or a bagel with cream cheese every day (and he’s okay with that!)

You do the best you can and show yourself some grace.

This breakfast bake is one of my go-to’s to prep for my husband for a quick weekday breakfast. With only five ingredients  (plus salt and pepper), you just can’t beat how fast it comes together! It pained me that this casserole had no greens or veggies in it, but I know it’s one of my husband’s favorites so I closed my eyes and added the cheese and bacon (kidding). Enjoy!

Bacon, Egg & Biscuit Breakfast Bake: What You’ll Need

  • Homestyle biscuits
  • Eggs
  • Bacon (or breakfast sausage)
  • Cheddar cheese
  • Milk
  • Salt & Pepper

This recipe makes four Texas-sized servings in a small rectangular baker, but you could easily double it for eight servings in a larger baking dish. See notes for cooking adjustments.

The biscuits end up cooking on top, which ensures that they don’t get soggy if you’ll be eating this over a few days!

This Bacon, Egg and Biscuit Breakfast Bake is so simple to make! It comes together in five minutes and reheats well for a quick weekday breakfast.

Ingredients
  • 2 uncooked homestyle biscuits cut into fourths
  • 8 eggs
  • 3 strips of bacon chopped
  • 1/3 cup milk
  • 1 cup shredded cheese

  • 2 uncooked homestyle biscuits cut into fourths

  • 3 strips of bacon chopped
  • 1/3 cup milk
  • 1 cup shredded cheese
Instructions
  1. Preheat oven to 350.
  2. Spray small rectangular baking dish or 8x8 square dish well with non-stick. Arrange biscuit pieces evenly on the bottom, then sprinkle bacon over the dish.
  3. Pour egg mixture over biscuits and bacon.
  4. Cover with foil and bake for 25 minutes. Remove foil, add cheese and cook uncovered for 15 minutes, or until a toothpick inserted comes out clean.
Recipe Notes
  • The biscuits expand quite a bit, hence the recipe only calling for two of them. We usually bake the extra biscuits while the casserole bakes, and freeze them.
  • If you're doubling the recipe and using a larger baking dish, increase covered cooking time to 35 minutes, and keep uncovered cooking time at 15 minutes, or until a toothpick comes out clean. If you find that the cheese is starting to brown but the casserole still isn't finished, cover with foil to prevent cheese from burning. [recipe]
